🍽️ Fluffy Pancakes with Mirabelle Compote

Ingredients
- 200 g whole wheat flour (e.g. emmer or spelt whole wheat flour)
- 0.5 tsp baking powder
- 400 ml milk (3.5 % fat)
- 0.5 tsp salt
- 5 eggs
- 600 g mirabelle plums
- 30 g butter (2 tbsp)
Instructions
- 1. Whisk flour, baking powder, milk, salt, and eggs in a bowl until you have a smooth batter.
- 2. Let the batter rest for 15 minutes.
- 3. Rinse the mirabelles under cold running water.
- 4. Cut the mirabelles in half and remove the pits.
- 5. Chop the mirabelles into small pieces.
- 6. Place 400 grams of the mirabelles into a saucepan.
- 7. Add a splash of water to the mirabelles in the saucepan.
- 8. Bring the mirabelles to a boil over medium heat.
- 9. Simmer the mirabelles for a few minutes until they reach your desired consistency.
- 10. Melt some butter in a non-stick frying pan over medium heat.
- 11. Pour portions of the pancake batter into the hot pan.
- 12. Press a few mirabelle pieces into the liquid batter.
- 13. Fry the pancakes for 2 to 3 minutes on each side until golden brown.
- 14. Repeat the process with the remaining butter, batter, and mirabelles.
- 15. Divide the finished pancakes among four plates.
- 16. Serve the pancakes with the mirabelle compote.
