  1. 1. Whisk flour, baking powder, milk, salt, and eggs in a bowl until you have a smooth batter.
  2. 2. Let the batter rest for 15 minutes.
  3. 3. Rinse the mirabelles under cold running water.
  4. 4. Cut the mirabelles in half and remove the pits.
  5. 5. Chop the mirabelles into small pieces.
  6. 6. Place 400 grams of the mirabelles into a saucepan.
  7. 7. Add a splash of water to the mirabelles in the saucepan.
  8. 8. Bring the mirabelles to a boil over medium heat.
  9. 9. Simmer the mirabelles for a few minutes until they reach your desired consistency.
  10. 10. Melt some butter in a non-stick frying pan over medium heat.
  11. 11. Pour portions of the pancake batter into the hot pan.
  12. 12. Press a few mirabelle pieces into the liquid batter.
  13. 13. Fry the pancakes for 2 to 3 minutes on each side until golden brown.
  14. 14. Repeat the process with the remaining butter, batter, and mirabelles.
  15. 15. Divide the finished pancakes among four plates.
  16. 16. Serve the pancakes with the mirabelle compote.
