🍽️ Fluffy Pancakes with Fruity Spiced Oranges

Ingredients
- 2 Oranges
- 1 Lime
- 20 g Cashew nuts
- 1 pinch Cinnamon
- 3 Eggs
- 1 pinch Salt
- 125 g Flour
- 1 tbsp Oat bran
- 1 pinch Baking powder
- 4 tbsp Milk
- 4 tbsp Sunflower oil
- Maple syrup (for serving)
Instructions
- 1. Peel the oranges completely using a sharp knife and remove all white pith.
- 2. Slice the orange flesh into thin rounds.
- 3. Squeeze the lime and pour the juice directly over the orange slices.
- 4. Roughly chop the cashew nuts.
- 5. Mix the chopped cashews with the cinnamon and fold the mixture into the oranges.
- 6. Set the orange mixture aside to let the flavors meld.
- 7. Carefully separate the eggs so that the whites and yolks are distinct.
- 8. Whip the egg whites with a pinch of salt until stiff peaks form.
- 9. Combine the flour, bran, and baking powder in a bowl.
- 10. Add the egg yolks and milk to the flour mixture and stir until you have a thick batter.
- 11. Gently fold the whipped egg whites into the batter.
- 12. Heat some oil in a hot frying pan.
- 13. Drop small portions of the batter into the pan using a spoon.
- 14. Fry the pancakes until golden brown on both sides.
- 15. Stack the finished pancakes on a plate.
- 16. Serve the pancakes best immediately.
- 17. Drizzle some maple syrup over the pancakes.
- 18. Serve the marinated oranges as a side dish.
