  2. 2. Add the egg yolks, buttermilk, and butter.
  3. 3. Stir the ingredients only briefly until the dry ingredients are just moist.
  4. 4. Let the batter rest for 30 minutes.
  5. 5. Whip the egg whites until stiff.
  6. 6. Gently fold the stiff egg whites into the batter.
  7. 7. Fold the blueberries into the batter.
  8. 8. Reserve a few blueberries for decoration.
  9. 9. Heat some butter in a non-stick pan.
  10. 10. Cook the pancakes one by one.
  11. 11. Leave some space between the individual pancakes when pouring the batter.
  12. 12. Keep finished pancakes warm in the oven at 80 degrees Celsius.
  13. 13. Serve the pancakes with the reserved blueberries.
  14. 14. Sprinkle the pancakes with cinnamon and sugar to taste.
