🍰 Fluffy Blueberry Pancakes

Ingredients
- 250 g flour
- 2 tsp baking powder
- 0.5 tsp salt
- 3 tbsp sugar
- 2 eggs
- 500 ml buttermilk
- 2 tbsp melted butter
- 200 g blueberries
- cinnamon (for dusting)
- sugar (for dusting)
- butter (for frying)
Instructions
- 1. Put flour, baking powder, salt, and sugar into a large bowl.
- 2. Add the egg yolks, buttermilk, and butter.
- 3. Stir the ingredients only briefly until the dry ingredients are just moist.
- 4. Let the batter rest for 30 minutes.
- 5. Whip the egg whites until stiff.
- 6. Gently fold the stiff egg whites into the batter.
- 7. Fold the blueberries into the batter.
- 8. Reserve a few blueberries for decoration.
- 9. Heat some butter in a non-stick pan.
- 10. Cook the pancakes one by one.
- 11. Leave some space between the individual pancakes when pouring the batter.
- 12. Keep finished pancakes warm in the oven at 80 degrees Celsius.
- 13. Serve the pancakes with the reserved blueberries.
- 14. Sprinkle the pancakes with cinnamon and sugar to taste.
