🍽️ Fluffy Blueberry Pancakes

Ingredients
- 150 g flour
- 1 heaped tsp baking powder
- 2 tbsp whole cane sugar
- 2 eggs
- 250 ml milk
- 1 pinch salt
- maple syrup (to taste)
- oil (for frying)
- 100 g blueberries
Instructions
- 1. Rinse the blueberries under running water.
- 2. Pat the berries dry with a kitchen towel.
- 3. Set the prepared blueberries aside.
- 4. Beat the eggs in a large bowl with a fork or whisk.
- 5. Pour the milk into the eggs and stir briefly.
- 6. Add the flour to the bowl.
- 7. Add the baking powder.
- 8. Sprinkle in the whole cane sugar.
- 9. Lightly salt the mixture.
- 10. Mix everything with a hand mixer for 1 to 2 minutes until the batter is smooth.
- 11. Heat some oil in a frying pan.
- 12. Pour portions of batter into the hot pan.
- 13. Fry the pancakes over medium heat until the underside is golden brown.
- 14. Flip the pancakes and fry them golden brown on the other side as well.
- 15. Stack the finished pancakes on top of each other to keep them warm.
- 16. Serve the pancakes with maple syrup and the prepared blueberries.
