  1. 1. Soak the saffron in three tablespoons of lukewarm water.
  2. 2. Peel the onion and garlic and chop them finely.
  3. 3. Let the peas thaw.
  4. 4. Wash the peppers, halve them, remove the seeds and white inner walls, and slice them into thin strips.
  5. 5. Clean the mushrooms and slice them thinly.
  6. 6. Wash the tomatoes, quarter them, remove the seeds, and cut them into small cubes.
  7. 7. Wash the meat and fish and pat them dry.
  8. 8. Cut the meat and fish into bite-sized cubes.
  9. 9. Rinse the shrimp under running water and let them drain well.
  10. 10. Remove the mussels from their shells.
  11. 11. Heat two tablespoons of oil in a large paella pan.

  25. 25. Let the mixture simmer for another 4 to 5 minutes.
  26. 26. Stir in the mushrooms, mussels, and shrimp.
  27. 27. Season everything with salt, pepper, and lemon juice.
  28. 28. Let the paella simmer for another 3 minutes.
  29. 29. Taste the paella again and adjust seasoning if needed.
  30. 30. Serve the paella plated.
