🍽️ Classic Paella with Seafood and Meat

Ingredients
- 1 tsp. Saffron (0.1 g)
- 1 Onion
- 1 Clove of garlic
- 150 g green peas (frozen)
- 1 Bell pepper
- 150 g brown mushrooms
- 2 Tomatoes
- 250 g chicken breast fillet
- 200 g white fish fillet (e.g. cod)
- 150 g Shrimp (peeled and deveined)
- 500 g cooked mussels
- 4 tbsp Olive oil
- 300 g Paella rice
- 200 ml dry white wine (or vegetable broth)
- 800 ml Meat broth
- 1 tbsp Butter
- Salt
- Pepper (from the mill)
- 1 dash Lemon juice
Instructions
- 1. Soak the saffron in three tablespoons of lukewarm water.
- 2. Peel the onion and garlic and chop them finely.
- 3. Let the peas thaw.
- 4. Wash the peppers, halve them, remove the seeds and white inner walls, and slice them into thin strips.
- 5. Clean the mushrooms and slice them thinly.
- 6. Wash the tomatoes, quarter them, remove the seeds, and cut them into small cubes.
- 7. Wash the meat and fish and pat them dry.
- 8. Cut the meat and fish into bite-sized cubes.
- 9. Rinse the shrimp under running water and let them drain well.
- 10. Remove the mussels from their shells.
- 11. Heat two tablespoons of oil in a large paella pan.
- 12. Fry the meat on all sides until well browned.
- 13. Remove the meat from the pan and set it aside.
- 14. Heat the remaining oil in the pan.
- 15. Sauté the onion with the garlic.
- 16. Add the peppers and rice and sauté briefly.
- 17. Deglaze the mixture with the wine.
- 18. Let the wine absorb completely.
- 19. Pour in the broth and stir in the soaked saffron.
- 20. Cook everything over medium heat for about 15 minutes.
- 21. Melt butter in another pan.
- 22. Fry the mushrooms while shaking the pan occasionally.
- 23. Set the mushrooms aside.
- 24. Stir the meat, fish, peas, and tomatoes into the paella.
- 25. Let the mixture simmer for another 4 to 5 minutes.
- 26. Stir in the mushrooms, mussels, and shrimp.
- 27. Season everything with salt, pepper, and lemon juice.
- 28. Let the paella simmer for another 3 minutes.
- 29. Taste the paella again and adjust seasoning if needed.
- 30. Serve the paella plated.
