🍽️ Paella with mixed meat, spicy sausage, and seafood

Ingredients
- 300 g mussels
- 150 ml dry white wine
- 4 chicken drumsticks
- 200 g pork (e.g. neck)
- 2 onions
- 2 garlic cloves
- 150 g scampi (ready for cooking)
- 100 g crab tails (ready for cooking, peeled)
- 1 red bell pepper
- 1 green bell pepper
- 4 tbsp olive oil
- 200 g chorizo
- 300 g short-grain rice
- 1 l chicken broth
- 1 small box saffron threads
- 100 g peas (frozen)
- salt
- pepper
Instructions
- 1. Thoroughly wash the mussels and remove any dirty or damaged shells.
- 2. Bring the wine to a boil in a pot.
- 3. Add the mussels to the boiling wine.
- 4. Steam the mussels covered for 6 to 8 minutes until they have opened.
- 5. Discard any mussels that have not opened.
- 6. Remove the cooked mussels from the broth and set them aside.
- 7. Preheat the oven to 160 degrees Celsius fan-forced.
- 8. Wash the meat and pat it dry with a kitchen towel.
- 9. Cut the meat into small cubes.
- 10. Peel the onion and the garlic.
- 11. Roughly chop the onion and the garlic.
- 12. Wash the scampi (small prawns) and pat them dry.
- 13. Halve the bell peppers and remove the seeds.
- 14. Wash the bell peppers and chop them roughly.
- 15. Heat the olive oil in a large, deep pan.
- 16. Sear the chicken drumsticks in 2 tablespoons of oil for a short time.
- 17. Remove the chicken drumsticks from the pan and set them aside.
- 18. Sear the sliced sausage and the pork for a short time.
- 19. Remove the sausage and the pork from the pan.
- 20. Add the rice, onions, and garlic to the remaining oil.
- 21. Sauté the rice, onions, and garlic.
- 22. Deglaze the mixture with the broth.
- 23. Add saffron and peas.
- 24. Place the chicken drumsticks back on top of the rice.
- 25. Place the pan in the preheated oven.
- 26. Cook the paella for approx. 30 minutes until the rice has absorbed the liquid but still has a bite.
- 27. Add more liquid if necessary, if the rice is too dry.
- 28. Add all remaining ingredients to the rice in the last 10 minutes.
- 29. Cook the ingredients through until they are done.
- 30. Season the paella with salt and pepper to taste.
- 31. Serve the paella hot.
