🍽️ Paella with Mussels and Chicken

Ingredients
- 200 g frozen peas
- 2 red bell peppers
- 300 g chicken breast fillet (kitchen-ready; skinless)
- 4 large prawns (kitchen-ready; with head and shell)
- 350 g mussels (kitchen-ready)
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 300 g short-grain rice
- 0.1 g saffron threads
- paprika powder sweet (to taste)
- 750 ml meat broth
Instructions
- 1. Let the peas thaw.
- 2. Wash the bell peppers.
- 3. Quarter the bell peppers.
- 4. Remove the seeds from the bell peppers.
- 5. Cut the bell peppers into bite-sized pieces.
- 6. Wash the chicken meat.
- 7. Pat the chicken meat dry.
- 8. Cut the chicken meat into approx. 2 cm cubes.
- 9. Rinse the prawns.
- 10. Rinse the mussels.
- 11. Clean the prawns.
- 12. Clean the mussels.
- 13. Discard the opened mussels.
- 14. Peel the onion.
- 15. Peel the garlic.
- 16. Finely chop the onion.
- 17. Finely chop the garlic.
- 18. Heat the oil in a pan.
- 19. Fry the meat sharply on all sides.
- 20. Season the meat with salt and pepper.
- 21. Turn the meat once more.
- 22. Remove the meat from the pan.
- 23. Add the mussels to the pan.
- 24. Add the prawns to the pan.
- 25. Season the mussels and prawns.
- 26. Sauté the mussels and prawns while stirring.
- 27. Remove the still closed mussels.
- 28. Remove the mussels from the pan.
- 29. Remove the prawns from the pan.
- 30. Set aside the mussels and prawns.
- 31. Fry the bell peppers in the pan.
- 32. Remove the bell peppers from the pan.
- 33. Add the onion to the pan.
- 34. Add the garlic to the pan.
- 35. Sweat the onion and garlic until translucent.
- 36. Add the rice to the pan.
- 37. Add the spices to the pan.
- 38. Fill the pan with the broth.
- 39. Cook the pan at medium heat for 20–25 minutes.
- 40. Fold in the bell peppers 5 minutes before the end of the cooking time.
- 41. Fold in the thawed peas 5 minutes before the end of the cooking time.
- 42. Warm the bell peppers and peas.
- 43. Add the meat back to the pan.
- 44. Add the seafood back to the pan.
- 45. Mix everything in.
- 46. Preheat the oven to 200 °C (convection 180 °C; gas: level 3).
- 47. Finish cooking the paella covered in the preheated oven for 10 minutes.
- 48. Remove the paella from the oven.
- 49. Season the paella with salt and pepper.
- 50. Serve the paella immediately.
