🍽️ Chicken Paella with Sausage and Vegetables

Ingredients
- 4 chicken drumsticks
- 200 g lean pork
- 1 small garlic sausage
- 1 onion
- 1 garlic clove
- 3 small tomatoes
- bell peppers (1 small red, yellow & green each)
- 200 g long-grain rice
- 5 tbsp olive oil
- salt
- pepper
- 4 artichoke hearts (from the jar)
- 300 ml meat broth (from the jar)
- 100 ml white wine
- 0.5 tsp saffron
- 1 bay leaf
- 1 tsp thyme
- lemon juice
Instructions
- 1. Wash the chicken thighs thoroughly and pat them dry with a kitchen towel.
- 2. Cut the chicken meat into bite-sized cubes.
- 3. Slice the sausage into round pieces.
- 4. Peel the onion and garlic and chop both finely.
- 5. Blanch the tomatoes with hot water, shock them immediately in cold water, and peel off the skin.
- 6. Quarter the cored tomatoes.
- 7. Halve the bell peppers, wash them, and remove the core.
- 8. Cut the bell peppers into strips approximately 4 cm long.
- 9. Rinse the rice under cold water until the water runs clear.
- 10. Heat about 3 tablespoons of olive oil in a large pan.
- 11. Fry the chicken thighs in the pan for 15 minutes until well browned.
- 12. Add the pork and fry it together for another 5 minutes.
- 13. Remove the meat from the pan and set it aside.
- 14. Lightly salt the meat.
- 15. Add the chopped garlic, onion, peppers, and drained artichokes to the pan.
- 16. Sauté the vegetables for 5 minutes.
- 17. Remove the vegetables from the pan and set them aside.
- 18. Add the remaining oil to the pan.
- 19. Add the rice to the pan and let it become translucent.
- 20. Pour the broth and wine over the rice.
- 21. Add saffron, bay leaves, and thyme.
- 22. Cook the rice covered over low heat for 10 minutes.
- 23. Season the rice with salt, pepper, and lemon juice.
- 24. Mix the meat, chicken pieces, sausage, and vegetables into the rice.
- 25. Let everything cook for another 10 minutes.
