🍽️ Crispy Seafood and Rabbit Paella

Ingredients
- 200 g wide, green beans
- 800 g rabbit cut into small pieces (with bones)
- 1 clove garlic
- 5 tbsp olive oil
- 350 g paella rice
- 1 sachet saffron (0.1 g)
- salt
- pepper
- 1 l meat broth
- 3 giant prawns
- 3 scampi
Instructions
- 1. Preheat the oven to 180 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Wash the green beans thoroughly. Remove the tough ends and cut the beans into bite-sized pieces.
- 3. Rinse the rabbit meat briefly. Pat it dry with a kitchen towel.
- 4. Peel the garlic cloves. Finely chop the garlic.
- 5. Heat 2 to 3 tablespoons of oil in a large paella pan.
- 6. Fry the rabbit meat in the hot pan for about 5 minutes until golden brown on all sides.
- 7. Remove the browned rabbit meat from the pan and set it aside.
- 8. Add the prepared green beans and the chopped garlic to the same pan.
- 9. Add 1 to 2 tablespoons of oil. Sauté the vegetables for about 5 minutes until they are soft.
- 10. Return the browned rabbit meat to the pan.
- 11. Add the saffron and the rice. Stir everything well so that the rice is mixed with the oil and spices.
- 12. Season the mixture with salt and pepper to taste.
- 13. Pour the prepared broth over the rice, meat, and vegetable mixture.
- 14. Place the pan in the preheated oven. Finish baking the paella for about 20 minutes.
- 15. Rinse the prawns and scampi briefly.
- 16. Remove the pan from the oven after 20 minutes.
- 17. Place the prawns and scampi evenly on top of the paella.
- 18. Return the pan to the oven for another 5 to 10 minutes to cook the seafood.
- 19. Check if the rice is tender. Taste the paella one last time to adjust the seasoning.
- 20. Serve the paella hot.
