  1. 1. Preheat the oven to 180 degrees Celsius. Set the heating mode to top and bottom heat.
  2. 2. Wash the green beans thoroughly. Remove the tough ends and cut the beans into bite-sized pieces.
  3. 3. Rinse the rabbit meat briefly. Pat it dry with a kitchen towel.
  4. 4. Peel the garlic cloves. Finely chop the garlic.
  5. 5. Heat 2 to 3 tablespoons of oil in a large paella pan.
  6. 6. Fry the rabbit meat in the hot pan for about 5 minutes until golden brown on all sides.
  7. 7. Remove the browned rabbit meat from the pan and set it aside.
  8. 8. Add the prepared green beans and the chopped garlic to the same pan.
  9. 9. Add 1 to 2 tablespoons of oil. Sauté the vegetables for about 5 minutes until they are soft.
  10. 10. Return the browned rabbit meat to the pan.
  11. 11. Add the saffron and the rice. Stir everything well so that the rice is mixed with the oil and spices.
  12. 12. Season the mixture with salt and pepper to taste.
  13. 13. Pour the prepared broth over the rice, meat, and vegetable mixture.
  14. 14. Place the pan in the preheated oven. Finish baking the paella for about 20 minutes.
  15. 15. Rinse the prawns and scampi briefly.
  16. 16. Remove the pan from the oven after 20 minutes.
  17. 17. Place the prawns and scampi evenly on top of the paella.
  18. 18. Return the pan to the oven for another 5 to 10 minutes to cook the seafood.
  19. 19. Check if the rice is tender. Taste the paella one last time to adjust the seasoning.
  20. 20. Serve the paella hot.
