🍳 Overnight buckwheat with apples, grapes, and nuts

Ingredients
- 200 g buckwheat flakes
- 15 g ground flaxseeds (3 tbsp)
- 30 g whole cane sugar (2 tbsp)
- 400 ml oat drink (oat milk)
- 1 apple
- 2 dried dates (pitted)
- 200 g red seedless grapes
- 1 tbsp lemon juice
- 50 g roasted pecan kernels
- 40 g dark chocolate (min. 85% cocoa content)
- 200 g soy yogurt
Instructions
- 1. Put the buckwheat flakes, flaxseeds, and one tablespoon of full cane sugar into a bowl.
- 2. Pour in the oat drink and stir the mixture well.
- 3. Cover the bowl and place it in the refrigerator overnight to let the ingredients swell.
- 4. Wash the apple thoroughly.
- 5. Cut the apple in half and remove the core.
- 6. Cut the apple flesh into small cubes.
- 7. Cut the dates into thin strips.
- 8. Wash the grapes.
- 9. Cut the grapes in half.
- 10. Remove the seeds from the grapes if they still have them.
- 11. Mix the chopped apple, date strips, and grapes in a bowl.
- 12. Add the remaining sugar and lemon juice and mix everything well.
- 13. Chop the Brazil nuts coarsely.
- 14. Chop the chocolate coarsely.
- 15. Take the bowl with the buckwheat out of the refrigerator.
- 16. Stir the buckwheat vigorously once more.
- 17. Fill the buckwheat into four glasses.
- 18. Put the soy yogurt on top of the buckwheat.
- 19. Distribute the fruit mixture on top of the yogurt.
- 20. Decorate the dish with the chopped Brazil nuts and chocolate.
