🍽️ Yeast Dough Nests with Apricots and Egg

Ingredients
- 500 g flour
- salt
- 42 g yeast
- 75 g sugar
- 0.25 l milk
- 50 g butter
- 1 egg
- 100 g apricots (dried)
- 1 egg yolk
- 8 eggs
Instructions
- 1. Sift the flour into a large bowl.
- 2. Press a well into the center of the flour.
- 3. Crumble the yeast into small pieces.
- 4. Mix the yeast with one tablespoon of sugar and some milk.
- 5. Pour the yeast mixture into the well.
- 6. Lightly dust the mixture with flour.
- 7. Add salt, the remaining milk, the remaining sugar, the butter, and the egg.
- 8. Knead everything into a smooth dough.
- 9. Cover the bowl.
- 10. Let the dough rise in a warm place until it has doubled in size.
- 11. Dice the apricots roughly.
- 12. Toss the apricots in flour.
- 13. Knead the apricots into the dough.
- 14. Divide the dough into eight equal pieces.
- 15. Shape each piece into a roll about 40 centimeters long.
- 16. Coil the roll into a snake.
- 17. Form a circle by pressing the ends firmly together.
- 18. Place an egg in the center of each nest.
- 19. Brush the egg with egg yolk.
- 20. Bake the nests at 200 degrees for about 15 minutes.
