🍰 Spring-themed Easter Muffins with Marzipan Bunnies

Ingredients
- 4 Eggs
- 100 g Whole grain rusk (10 slice)
- 1 Organic lemon
- 300 g Apples (2 Apples)
- 200 g ground hazelnut kernels
- 150 g brown sugar
- 2 tsp baking powder
- 50 g honey marzipan raw mass
- 0.5 tsp cocoa powder
- 250 g buttermilk quark (or skimmed quark)
- 20 g powdered sugar (2 tbsp)
- 50 g chopped pistachios
Instructions
- 1. Separate the eggs. Place the egg whites in a tall, narrow container and the egg yolks in a large mixing bowl.
- 2. Beat the egg whites with the beaters of a hand mixer until stiff peaks form. Set the whipped mixture aside.
- 3. Crush the bread croutons in a food processor or blender until they form fine crumbs.
- 4. Wash the lemon and pat it dry. Finely grate the lemon zest.
- 5. Cut the lemon in half and squeeze out the juice.
- 6. Wash the apples and pat them dry.
- 7. Grate the apples coarsely, including the skin.
- 8. Add the grated apple, bread crumbs, hazelnuts, sugar, baking powder, lemon zest, and 2 tablespoons of lemon juice to the egg yolks in the large bowl.
- 9. Mix all the ingredients for the yolk mixture thoroughly with the beaters of a hand mixer.
- 10. Add the previously whipped egg whites on top of the yolk mixture.
- 11. Gently fold the egg whites into the mixture with a rubber spatula until evenly distributed.
- 12. Place 12 paper liners into the indentations of a 12-cup muffin tin.
- 13. Divide the batter evenly among the paper liners.
- 14. Smooth the top of each muffin with the back of a spoon.
- 15. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
- 16. Bake the muffins for about 25 minutes in the preheated oven.
- 17. Check for doneness by inserting a wooden skewer into the center of a muffin. If no batter sticks to the skewer, they are done.
- 18. Remove the muffins from the oven.
- 19. Let the muffins cool completely on a wire rack for about 35 minutes.
- 20. Knead the marzipan raw mass thoroughly with the cocoa powder in the meantime.
- 21. Roll out the marzipan dough with a rolling pin to a thickness of about 3 millimeters.
- 22. Cut out small bunny shapes from the marzipan sheet using a small cookie cutter.
- 23. Place the quark (fresh cheese), powdered sugar, and 1 to 2 tablespoons of lemon juice into a bowl.
- 24. Beat the quark cream with a hand mixer until it is creamy and smooth.
- 25. Spread about 1 tablespoon of the quark cream onto each cooled muffin.
- 26. Sprinkle the muffins with pistachios.
- 27. Place the marzipan bunnies on top of the muffins as decoration.
- 28. Serve the finished Easter muffins.
