  1. 1. Separate the eggs. Place the egg whites in a tall, narrow container and the egg yolks in a large mixing bowl.
  2. 2. Beat the egg whites with the beaters of a hand mixer until stiff peaks form. Set the whipped mixture aside.
  3. 3. Crush the bread croutons in a food processor or blender until they form fine crumbs.
  4. 4. Wash the lemon and pat it dry. Finely grate the lemon zest.
  5. 5. Cut the lemon in half and squeeze out the juice.
  6. 6. Wash the apples and pat them dry.
  7. 7. Grate the apples coarsely, including the skin.
  8. 8. Add the grated apple, bread crumbs, hazelnuts, sugar, baking powder, lemon zest, and 2 tablespoons of lemon juice to the egg yolks in the large bowl.
  9. 9. Mix all the ingredients for the yolk mixture thoroughly with the beaters of a hand mixer.
  10. 10. Add the previously whipped egg whites on top of the yolk mixture.
  11. 11. Gently fold the egg whites into the mixture with a rubber spatula until evenly distributed.
  12. 12. Place 12 paper liners into the indentations of a 12-cup muffin tin.
  13. 13. Divide the batter evenly among the paper liners.
  14. 14. Smooth the top of each muffin with the back of a spoon.
  15. 15. Preheat the oven to 180 °C (160 °C for fan-assisted or gas mark 2–3).
  16. 16. Bake the muffins for about 25 minutes in the preheated oven.
  17. 17. Check for doneness by inserting a wooden skewer into the center of a muffin. If no batter sticks to the skewer, they are done.
  18. 18. Remove the muffins from the oven.
  19. 19. Let the muffins cool completely on a wire rack for about 35 minutes.
  20. 20. Knead the marzipan raw mass thoroughly with the cocoa powder in the meantime.
  21. 21. Roll out the marzipan dough with a rolling pin to a thickness of about 3 millimeters.
  22. 22. Cut out small bunny shapes from the marzipan sheet using a small cookie cutter.
  23. 23. Place the quark (fresh cheese), powdered sugar, and 1 to 2 tablespoons of lemon juice into a bowl.
  24. 24. Beat the quark cream with a hand mixer until it is creamy and smooth.
  25. 25. Spread about 1 tablespoon of the quark cream onto each cooled muffin.
  26. 26. Sprinkle the muffins with pistachios.
  27. 27. Place the marzipan bunnies on top of the muffins as decoration.
  28. 28. Serve the finished Easter muffins.
