  1. 1. Mix wheat flour, spelt flour, oat flakes, sugar, a pinch of salt, and baking powder in a large bowl.
  2. 2. Add butter and buttermilk.
  3. 3. Knead the ingredients into a smooth dough using a hand mixer with dough hooks.
  4. 4. Dust a work surface with flour.
  5. 5. Roll out the dough to about 1 centimeter thick.
  6. 6. Cut out 12 circles with a diameter of about 9 centimeters using a glass or small bowl.
  7. 7. Line a baking sheet with baking paper.
  8. 8. Place the dough circles on the tray with some space between them.
  9. 9. Cut from the outside to the center of each circle using kitchen scissors.
  10. 10. Pull the two resulting tips slightly apart to form ears.
  11. 11. Fold one ear inward on each pastry.
  12. 12. Place two raisins as eyes on each bunny.
  13. 13. Brush the bunnies with coffee cream.
  14. 14. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced).
  15. 15. Bake the Easter bunnies for about 15 minutes until golden brown.
  16. 16. Remove the bunnies from the oven.
  17. 17. Let them cool slightly on a wire rack.
  18. 18. Wash the strawberries under running water.
  19. 19. Dry them with kitchen paper.
  20. 20. Remove the green stems.
  21. 21. Cut the strawberries into small cubes.
  22. 22. Place about two-thirds of the strawberry cubes into a bowl.
  23. 23. Mash these berries slightly with a fork.
  24. 24. Add quark cheese, sparkling water, and powdered sugar into a separate bowl.
  25. 25. Whip the mixture until creamy using the beaters of a hand mixer.
  26. 26. Gently fold the mashed strawberries into the quark mixture.
  27. 27. Use the remaining fresh strawberry cubes for decoration.
  28. 28. Serve the cream together with the warm Easter bunnies.
