🍰 Easter Bunny Pastries

Ingredients
- 150 g spelt whole wheat flour
- 150 g spelt flour (Type 630)
- 200 g fine oat flakes
- 50 g raw cane sugar
- 1 pinch salt
- 1 packet baking powder
- 100 g yogurt butter
- 220 ml buttermilk
- 24 raisins
- 3 tbsp coffee cream (10 % fat)
- 350 g strawberries
- 350 g buttermilk quark (or skimmed quark)
- 4 tbsp mineral water (with carbonation)
- 40 g powdered sugar (from raw cane sugar, 4 tbsp)
Instructions
- 1. Mix wheat flour, spelt flour, oat flakes, sugar, a pinch of salt, and baking powder in a large bowl.
- 2. Add butter and buttermilk.
- 3. Knead the ingredients into a smooth dough using a hand mixer with dough hooks.
- 4. Dust a work surface with flour.
- 5. Roll out the dough to about 1 centimeter thick.
- 6. Cut out 12 circles with a diameter of about 9 centimeters using a glass or small bowl.
- 7. Line a baking sheet with baking paper.
- 8. Place the dough circles on the tray with some space between them.
- 9. Cut from the outside to the center of each circle using kitchen scissors.
- 10. Pull the two resulting tips slightly apart to form ears.
- 11. Fold one ear inward on each pastry.
- 12. Place two raisins as eyes on each bunny.
- 13. Brush the bunnies with coffee cream.
- 14. Preheat the oven to 200 degrees Celsius conventional heat (or 180 degrees Celsius fan-forced).
- 15. Bake the Easter bunnies for about 15 minutes until golden brown.
- 16. Remove the bunnies from the oven.
- 17. Let them cool slightly on a wire rack.
- 18. Wash the strawberries under running water.
- 19. Dry them with kitchen paper.
- 20. Remove the green stems.
- 21. Cut the strawberries into small cubes.
- 22. Place about two-thirds of the strawberry cubes into a bowl.
- 23. Mash these berries slightly with a fork.
- 24. Add quark cheese, sparkling water, and powdered sugar into a separate bowl.
- 25. Whip the mixture until creamy using the beaters of a hand mixer.
- 26. Gently fold the mashed strawberries into the quark mixture.
- 27. Use the remaining fresh strawberry cubes for decoration.
- 28. Serve the cream together with the warm Easter bunnies.
