🍽️ Orientalic Lemon Chicken with Pears

Ingredients
- 1 chicken (approx. 1,2 kg)
- salt
- pepper (from the mill)
- 2 untreated lemons
- 1 shallot
- 1 garlic clove
- 20 g ginger
- 1 sachet saffron (0,1 g)
- 300 ml poultry broth
- 2 tbsp olive oil
- 4 small pears
- 2 dried apricots
- 2 tbsp raisins
- 2 tbsp sultanas
- 2 tbsp cashew nuts
- 1 tbsp butter
- 1 tbsp liquid honey
- 1 tsp chopped parsley
Instructions
- 1. Wash the chicken and pat it dry with a kitchen towel.
- 2. Cut the chicken into 8 pieces.
- 3. Rub the chicken pieces with salt and pepper.
- 4. Wash the lemons under hot water and pat them dry.
- 5. Grate the zest from one lemon finely.
- 6. Slice both lemons into thin rounds.
- 7. Peel the shallot, the garlic, and the ginger.
- 8. Finely chop the shallot, garlic, and ginger.
- 9. Stir the saffron into 3 to 4 tablespoons of broth and let it steep.
- 10. Heat the oil in a pot or pan.
- 11. Sauté the shallot, garlic, and ginger in the hot oil.
- 12. Place the chicken pieces into the pot.
- 13. Add the lemon slices.
- 14. Pour the regular broth and the saffron broth over the chicken.
- 15. Bring the mixture to a boil.
- 16. Reduce the heat and cover the pot.
- 17. Let the chicken simmer gently for 35 to 40 minutes.
- 18. Peel the pears.
- 19. Quarter the pears.
- 20. Chop the apricots finely.
- 21. Mix the chopped apricots with the raisins, sultanas, cashews, and lemon zest.
- 22. Melt the butter in a pan.
- 23. Sauté the pears in the butter briefly until they are lightly golden brown.
- 24. Add the pears and the dried fruit mixture to the chicken dish in the last 5 to 10 minutes.
- 25. Season the dish with honey, salt, and pepper to taste.
- 26. Sprinkle the finished dish with parsley.
- 27. Serve the chicken.
