🍽️ Orientalic Chickpea Ragù

Ingredients
- 1 onion
- 1 garlic clove
- 2 carrots
- 350 g tomatoes
- 2 tbsp olive oil
- 1 tsp harissa paste
- 200 g chickpeas (jar; drained weight)
- 100 g sour cream (10 % fat)
- salt
- pepper
- 0.5 tsp ras el-hanout
- 1 pinch cayenne pepper
Instructions
- 1. Peel the onion and garlic and chop them finely. Clean and peel the carrots, then cut them into small cubes. Wash the tomatoes and cut them into small cubes as well.
- 2. Heat the oil in a pot. Sauté the carrots, onion, and garlic in it for 5 minutes over medium heat. Add harissa, the tomatoes, and 50 milliliters of water, and let the mixture simmer for 10 minutes over low heat.
- 3. Drain the chickpeas and let them drip dry well. Add them to the sauce and let them simmer for another 5 minutes. Stir in the sour cream and season everything to taste with salt, pepper, ras el-hanout (an Oriental spice blend), and cayenne pepper.
