  1. 1. Pour boiling broth over the couscous in a bowl and let it swell for about 10 minutes.
  2. 2. Peel the onion in the meantime and dice it finely. Drain the feta and dice it small or crumble it. Wash mint, coriander and parsley, shake them dry and pick off the leaves. Halve or quarter the pomegranates and remove the seeds.
  3. 3. Fluff the couscous with a fork. Mix in onion, feta, herbs and pomegranate seeds. Add lemon juice and argan oil and season the oriental couscous salad with salt and pepper.
