  1. 1. Put the couscous into a bowl.
  2. 2. Pour boiling vegetable broth over the couscous.
  3. 3. Let the couscous swell for about 10 minutes.
  4. 4. Then let the couscous cool down.
  5. 5. Wash the zucchini and cut it into small cubes.
  6. 6. Wash the spring onions and slice them into thin rings.
  7. 7. Cut some of the green parts of the spring onions into thin strips for decoration.
  8. 8. Dice the apricots into small pieces.
  9. 9. Heat the oil in a pan.
  10. 10. Add the zucchini, spring onions, apricots, raisins, and pine nuts to the hot pan.
  11. 11. Sauté the vegetables over high heat for 3 minutes.
  12. 12. Remove the pan from the heat.
  13. 13. Mix the pan contents with 4 tablespoons of water.
  14. 14. Let the vegetable mixture cool down.
  15. 15. Mix the cooled vegetable mixture with the couscous.
  16. 16. Season the salad with lemon juice and honey.
  17. 17. Divide the salad among four small bowls.
  18. 18. Wash the mint and shake it dry.
  19. 19. Garnish the salad with mint, chili flakes, and the thin spring onion strips.
