🍽️ Oriental Couscous Salad

Ingredients
- 300 g Couscous (instant)
- 600 ml Vegetable broth (hot)
- 2 Zucchini
- 2 Spring onions
- 60 g dried Apricots
- 3 tbsp Olive oil
- 30 g Raisins (2 tbsp)
- 20 g Pine nuts (2 tbsp)
- 2 tbsp Lemon juice
- 1 tsp Honey
- 4 tsp Mint
- Chili flakes
Instructions
- 1. Put the couscous into a bowl.
- 2. Pour boiling vegetable broth over the couscous.
- 3. Let the couscous swell for about 10 minutes.
- 4. Then let the couscous cool down.
- 5. Wash the zucchini and cut it into small cubes.
- 6. Wash the spring onions and slice them into thin rings.
- 7. Cut some of the green parts of the spring onions into thin strips for decoration.
- 8. Dice the apricots into small pieces.
- 9. Heat the oil in a pan.
- 10. Add the zucchini, spring onions, apricots, raisins, and pine nuts to the hot pan.
- 11. Sauté the vegetables over high heat for 3 minutes.
- 12. Remove the pan from the heat.
- 13. Mix the pan contents with 4 tablespoons of water.
- 14. Let the vegetable mixture cool down.
- 15. Mix the cooled vegetable mixture with the couscous.
- 16. Season the salad with lemon juice and honey.
- 17. Divide the salad among four small bowls.
- 18. Wash the mint and shake it dry.
- 19. Garnish the salad with mint, chili flakes, and the thin spring onion strips.
