  1. 1. Peel the onion and the garlic clove.

  3. 3. Press the garlic through a garlic press.
  4. 4. Bring the vegetable broth to a boil in a pot.
  5. 5. Add the diced onion and the pressed garlic to the broth.
  6. 6. Add the frozen leaf spinach.
  7. 7. Cover the pot.
  8. 8. Simmer the vegetables on low heat for about 15 minutes.
  9. 9. Heat a pan in the meantime.
  10. 10. Toast the coconut flakes in the pan without added fat until golden brown.
  11. 11. Let the toasted coconut flakes cool down.
  12. 12. Put the yogurt into a bowl.
  13. 13. Season the yogurt with salt.

  15. 15. Add the curry powder to the yogurt.
