🍽️ Orientalic Spinach

Ingredients
- 1 onion
- 1 clove garlic
- 70 ml classic vegetable broth
- 450 g spinach (frozen)
- 10 g coconut flakes (1 tbsp)
- 100 g yogurt (0.1% fat)
- salt
- pepper
- 1 pinch curry powder
- 1 pinch ground cumin
Instructions
- 1. Peel the onion and the garlic clove.
- 2. Dice the onion into small cubes.
- 3. Press the garlic through a garlic press.
- 4. Bring the vegetable broth to a boil in a pot.
- 5. Add the diced onion and the pressed garlic to the broth.
- 6. Add the frozen leaf spinach.
- 7. Cover the pot.
- 8. Simmer the vegetables on low heat for about 15 minutes.
- 9. Heat a pan in the meantime.
- 10. Toast the coconut flakes in the pan without added fat until golden brown.
- 11. Let the toasted coconut flakes cool down.
- 12. Put the yogurt into a bowl.
- 13. Season the yogurt with salt.
- 14. Season the yogurt with pepper.
- 15. Add the curry powder to the yogurt.
- 16. Stir the yogurt mixture until smooth.
- 17. Season the cooked spinach with salt.
- 18. Season the cooked spinach with pepper.
- 19. Add cumin to the spinach.
- 20. Sprinkle the finished spinach with the cooled coconut flakes.
- 21. Serve the spinach together with the curry yogurt.
