🍽️ Orientalic Meatballs with Cherries

Ingredients
- 200 g Sour cherries
- 350 g Beef mince
- 30 g Wholemeal breadcrumbs (2 tbsp)
- 1 Egg yolk
- Salt
- Pepper
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 0.5 tsp Cinnamon
- 1 pinch ground allspice
- 2 tbsp Olive oil
- 1 Shallot
- 15 g Butter (1 tbsp)
- 2 Cloves
- 1 Cinnamon stick
- 1 tbsp Honey
- 80 ml Cherry juice
- 200 g Wholemeal pita (or wholemeal flatbread)
Instructions
- 1. Wash the sour cherries thoroughly.
- 2. Halve the cherries and remove the pits.
- 3. Mix the minced meat with the breadcrumbs, egg yolk, salt, pepper, and ground spices.
- 4. Shape the meat mixture into 12 balls, each about 3 centimeters in diameter.
- 5. Heat oil in a frying pan.
- 6. Fry the meatballs on all sides for about 7 to 8 minutes over medium heat.
- 7. Remove the meatballs from the pan.
- 8. Let the meatballs drain on kitchen paper.
- 9. Peel the shallot.
- 10. Dice the shallot finely.
- 11. Heat butter in the same pan.
- 12. Sauté the shallot cubes over low heat for 3 minutes.
- 13. Add the cherries, cloves, and cinnamon stick to the pan.
- 14. Drizzle the mixture with honey.
- 15. Caramelize the ingredients for 2 minutes.
- 16. Deglaze the pan with cherry juice.
- 17. Simmer the sauce for 10 minutes over low heat.
- 18. Remove the whole spices from the sauce.
- 19. Lightly crush the cherries in the sauce.
- 20. Return the meatballs to the sauce.
- 21. Simmer everything for another 4 minutes.
- 22. Serve the meatballs with bread.
