  1. 1. Pour 300 ml of lukewarm water into a large bowl and stir in the yeast. Mix both types of flour and blend half of it thoroughly with the yeast water. Cover the bowl and let the dough rest for about 2 hours.
  2. 2. Sprinkle the salt over the dough and mix it in well along with the olive oil. Then stir in the remaining flour. Place the dough on a lightly floured work surface and knead it for 8 to 10 minutes until it is soft and elastic.
  3. 3. Place the dough in a lightly oiled bowl, cover it with plastic wrap, and let it rise for about 1 1/2 hours until the volume has at least doubled.
  4. 4. Preheat the oven with a baking stone on the middle rack to 230°C using top and bottom heat.
  5. 5. Divide the dough into 8 pieces and press them slightly flat with floured hands. Roll them out into round flatbreads about 1/2 cm thick, brush them with a little water, and sprinkle with sea salt and oregano. Cover the flatbreads with a cloth.
  6. 6. Bake 2 to 4 breads at a time in the oven for 5 to 10 minutes, depending on the size of the baking stone, until they puff up.
