  1. 1. Carefully peel a thin strip of zest from the orange and cut it into very fine strips. Peel the shallot and cut it into small cubes.
  2. 2. Sauté the shallot cubes in 1 tbsp of oil until translucent (soft and see-through). Add the orange zest and sauté briefly. Remove the pan from the heat and let the mixture cool down.
  3. 3. Squeeze the orange. Whisk the orange juice with the vinegars, mustard, some salt, and pepper until well combined. Whisk in the remaining oil using a whisk, season to taste, and fold in the cooled orange strips and shallot cubes.
