  2. 2. Remove all the white pith.
  3. 3. Cut the flesh into small cubes.
  4. 4. Juice the remaining oranges.
  5. 5. Puree the orange pieces and half of the juice until smooth.
  6. 6. Add the remaining orange juice to the puree mixture.
  7. 7. Add the lemon juice.
  8. 8. Add the honey.
  9. 9. Top up with water to make exactly 500 milliliters.
  10. 10. Stir in the carob seed flour (a natural thickener) well.
  11. 11. Place the soup in the refrigerator for 30 minutes.
  12. 12. Let the soup thicken slightly.
  13. 13. Wash the figs.
  14. 14. Pat the figs dry.
  15. 15. Cut the figs in half crosswise.
  16. 16. Divide the cold orange mixture among the plates.
  17. 17. Top with the fig slices.
  18. 18. Garnish with a few lemon balm leaves.
