🍽️ Refreshing Orange Cold Soup with Figs

Ingredients
- 3 Oranges
- 2 tbsp Lemon juice
- 1 tbsp liquid Honey
- 3 tbsp Locust bean flour (plant-based thickener, health food store)
- 2 Figs
- 1 sprig Lemon balm
Instructions
- 1. Peel one orange with a sharp knife.
- 2. Remove all the white pith.
- 3. Cut the flesh into small cubes.
- 4. Juice the remaining oranges.
- 5. Puree the orange pieces and half of the juice until smooth.
- 6. Add the remaining orange juice to the puree mixture.
- 7. Add the lemon juice.
- 8. Add the honey.
- 9. Top up with water to make exactly 500 milliliters.
- 10. Stir in the carob seed flour (a natural thickener) well.
- 11. Place the soup in the refrigerator for 30 minutes.
- 12. Let the soup thicken slightly.
- 13. Wash the figs.
- 14. Pat the figs dry.
- 15. Cut the figs in half crosswise.
- 16. Divide the cold orange mixture among the plates.
- 17. Top with the fig slices.
- 18. Garnish with a few lemon balm leaves.
