  1. 1. Rinse the oranges under hot water and pat them dry.
  2. 2. Using a sharp knife, cut very thin strips from the peel (zest).
  3. 3. Place the zest in boiling water for 1 minute.
  4. 4. Drain the water and rinse the zest with cold water to stop the cooking process (blanching).
  5. 5. Cut the oranges in half and squeeze out the juice.
  6. 6. Put the honey in a pot and let it caramelize briefly.
  7. 7. Deglaze the pot with orange juice, Madeira, and vinegar.
  8. 8. Let the liquid reduce by about two-thirds.
  9. 9. Add the broth and bring the sauce to a boil.
  10. 10. Stir the starch smooth with 1 tablespoon of water.
  11. 11. Add the starch mixture to the sauce while stirring.
  12. 12. Let the sauce boil briefly.
  13. 13. Add the blanched orange zest.
  14. 14. Season the sauce with salt to finish.
