🍽️ Quick Orange Zest Sauce

Ingredients
- 2 organic oranges
- 1 tsp honey
- 125 ml Madeira
- 50 ml red wine vinegar
- 350 ml poultry broth
- 1 level tbsp cornstarch
- salt
Instructions
- 1. Rinse the oranges under hot water and pat them dry.
- 2. Using a sharp knife, cut very thin strips from the peel (zest).
- 3. Place the zest in boiling water for 1 minute.
- 4. Drain the water and rinse the zest with cold water to stop the cooking process (blanching).
- 5. Cut the oranges in half and squeeze out the juice.
- 6. Put the honey in a pot and let it caramelize briefly.
- 7. Deglaze the pot with orange juice, Madeira, and vinegar.
- 8. Let the liquid reduce by about two-thirds.
- 9. Add the broth and bring the sauce to a boil.
- 10. Stir the starch smooth with 1 tablespoon of water.
- 11. Add the starch mixture to the sauce while stirring.
- 12. Let the sauce boil briefly.
- 13. Add the blanched orange zest.
- 14. Season the sauce with salt to finish.
