🍰 Citrus Quark with Toasted Seed Mix

Ingredients
- 2 tbsp sunflower seeds (each 15 g)
- 3 tsp sesame seeds (each 5 g)
- 2 tsp ground flaxseeds (each 5 g)
- 3 organic oranges
- 500 g quark (20 % fat in dry matter)
- 3 tbsp maple syrup
Instructions
- 1. Put sunflower seeds, sesame seeds, and flaxseeds into a hot pan.
- 2. Toast the seeds without fat over medium heat for 3 minutes.
- 3. Remove the pan from the heat and set the seeds aside.
- 4. Let the seeds cool down completely.
- 5. Peel two oranges so that you remove all white pith.
- 6. Carefully cut out the fruit segments between the membranes.
- 7. Catch the released orange juice in a bowl while doing this.
- 8. Rinse the remaining orange with hot water and dry it.
- 9. Finely grate the zest of the orange.
- 10. Squeeze the orange to extract more juice.
- 11. Place the quark into a separate bowl.
- 12. Stir the quark with two tablespoons of maple syrup.
- 13. Add the collected orange juice and the grated zest.
- 14. Fold three quarters of the orange segments into the quark mixture.
- 15. Distribute the mixture evenly onto four plates.
- 16. Garnish the quark with the remaining orange segments.
- 17. Drizzle the dish with a little maple syrup.
- 18. Sprinkle the cooled seed mix over the top.
