  1. 1. Mix 400 grams of cream with sugar, quark, orange juice, and orange zest using the beaters of an electric hand mixer.
  2. 2. Soak the gelatin in cold water for about 10 minutes.
  3. 3. Squeeze out the gelatin and dissolve it in the orange liqueur in a small saucepan over low heat.
  4. 4. Stir in 3 tablespoons of the quark mixture and blend it thoroughly into the rest of the mixture.
  5. 5. Whip the remaining cream until stiff and fold it in.
  6. 6. Peel one orange and cut off 6 thicker slices.
  7. 7. Cut out the slices to fit the bottoms of the molds and place them in the molds.
  8. 8. Fill in the orange mousse and let it set in the refrigerator for 3 to 4 hours.
  9. 9. Peel the remaining oranges thoroughly with a sharp knife and cut out the fillets along the inner membranes.
  10. 10. Dip the molds briefly in hot water, turn them out onto dessert plates, and serve garnished with orange fillets.
