🍽️ Crunchy Orange Cookies

Ingredients
- 2 Eggs
- 1 Pinch Salt
- 120 g Powdered sugar from raw cane sugar
- 1 Organic Orange
- 90 g Butter
- 1 tsp Vanilla powder
- 280 g Spelt whole wheat flour
- 3 level tsp Baking powder
Instructions
- 1. Preheat your oven to 180 degrees Celsius using conventional heat. If you are using a fan oven, set it to 160 degrees. For gas ovens, select level 2 to 3.
- 2. Rinse the orange under hot water and pat it dry.
- 3. Finely grate the orange peel to use the zest.
- 4. Beat the eggs with a pinch of salt and 80 grams of powdered sugar in a bowl using a hand mixer until the mixture becomes airy and frothy.
- 5. Process the butter, vanilla powder, and orange zest into a smooth mixture.
- 6. Stir the egg mixture into the butter mixture.
- 7. Mix the flour with the baking powder.
- 8. Sift the flour mixture over the wet mixture.
- 9. Knead everything into a smooth dough.
- 10. Cover the dough and place it in the refrigerator for 1 hour.
- 11. Line a baking sheet with baking paper.
- 12. Shape the dough with slightly damp hands into about 65 small balls with a diameter of approx. 1.5 cm.
- 13. Roll the balls in the remaining powdered sugar.
- 14. Place the balls on the sheet and press them slightly flat.
- 15. Bake the cookies in the preheated oven for 12 to 15 minutes.
- 16. Remove the cookies from the oven and let them cool completely.
