Ingredients
- 200 g flour
- 200 g butter
- 100 g powdered sugar
- 100 g almond kernels
- 1 egg
- 0.25 tsp clove
- 0.5 tsp cinnamon
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 400 g orange marmalade
- 1 egg yolk
Instructions
- 1. Mix flour, ground almonds, powdered sugar, egg, ground cloves, cinnamon, lemon zest, and lemon juice in a bowl.
- 2. Knead the butter into the mixture until a smooth shortcrust dough forms.
- 3. Wrap the dough tightly in cling film.
- 4. Let the dough rest in the refrigerator for one hour.
- 5. Divide the dough into two equal parts.
- 6. Lightly dust a work surface with flour.
- 7. Roll out the first part of the dough as rectangular as possible to a thickness of about 1 centimeter.
- 8. Trim the irregular edges straight using a template or a sharp knife.
- 9. Place the dough on a baking sheet lined with baking paper.
- 10. Cut the dough lengthwise into two equal halves.
- 11. Dust the work surface again well with flour.
- 12. Roll out the second part of the dough to a similar size and thickness as the first.
- 13. Place this dough on the baking sheet next to the first half.
- 14. Spread both dough plates thickly and evenly with orange marmalade.
- 15. Trim the remaining dough (if available or from scraps) into a large rectangle by cutting the edges straight.
- 16. Divide this rectangle exactly in half lengthwise.
- 17. Mark the width of this rectangle into 5 to 6 equal sections.
- 18. Cut out a hole in the center of each section using a rectangular cookie cutter.
- 19. Choose a cutter small enough so that the grid's edges remain wide.
- 20. Carefully lift the cut-out dough grid.
- 21. Place the grid directly onto the dough plates coated with marmalade.
- 22. If the grid tears, still place it carefully onto the marmalade.
- 23. Connect the torn parts and drape them so that the rectangles look even.
- 24. Press the edges of the grid slightly to ensure they stick.
- 25. Use the remaining dough pieces to cut out additional small cookies.
- 26. Whisk one egg yolk with a splash of water in a small bowl.
- 27. Brush the dough grid with the egg yolk-water mixture.
- 28. Preheat the oven (convection mode at 160 degrees Celsius).
- 29. Place the tray in the center of the preheated oven.
- 30. Bake the cookies for 40 to 45 minutes.
- 31. Let the cookies cool completely on the tray.
- 32. Cut the cooled cookies into individual rectangular pieces using a sharp knife.
