  1. 1. Mix flour, ground almonds, powdered sugar, egg, ground cloves, cinnamon, lemon zest, and lemon juice in a bowl.
  2. 2. Knead the butter into the mixture until a smooth shortcrust dough forms.
  3. 3. Wrap the dough tightly in cling film.
  4. 4. Let the dough rest in the refrigerator for one hour.
  5. 5. Divide the dough into two equal parts.
  6. 6. Lightly dust a work surface with flour.
  7. 7. Roll out the first part of the dough as rectangular as possible to a thickness of about 1 centimeter.
  8. 8. Trim the irregular edges straight using a template or a sharp knife.
  9. 9. Place the dough on a baking sheet lined with baking paper.
  10. 10. Cut the dough lengthwise into two equal halves.
  11. 11. Dust the work surface again well with flour.
  12. 12. Roll out the second part of the dough to a similar size and thickness as the first.
  13. 13. Place this dough on the baking sheet next to the first half.
  14. 14. Spread both dough plates thickly and evenly with orange marmalade.
  15. 15. Trim the remaining dough (if available or from scraps) into a large rectangle by cutting the edges straight.
  16. 16. Divide this rectangle exactly in half lengthwise.
  17. 17. Mark the width of this rectangle into 5 to 6 equal sections.
  18. 18. Cut out a hole in the center of each section using a rectangular cookie cutter.
  19. 19. Choose a cutter small enough so that the grid's edges remain wide.
  20. 20. Carefully lift the cut-out dough grid.
  21. 21. Place the grid directly onto the dough plates coated with marmalade.
  22. 22. If the grid tears, still place it carefully onto the marmalade.
  23. 23. Connect the torn parts and drape them so that the rectangles look even.
  24. 24. Press the edges of the grid slightly to ensure they stick.
  25. 25. Use the remaining dough pieces to cut out additional small cookies.
  26. 26. Whisk one egg yolk with a splash of water in a small bowl.
  27. 27. Brush the dough grid with the egg yolk-water mixture.
  28. 28. Preheat the oven (convection mode at 160 degrees Celsius).
  29. 29. Place the tray in the center of the preheated oven.
  30. 30. Bake the cookies for 40 to 45 minutes.
