  1. 1. Wash the rhubarb thoroughly.
  2. 2. Remove the leaves and the tough outer skin.
  3. 3. Cut the rhubarb into small cubes.
  4. 4. Peel the oranges with a sharp knife.
  5. 5. Remove the white bitter pith as well.
  6. 6. Separate the fruit segments from the membranes.
  7. 7. Catch the released orange juice in a bowl.
  8. 8. Squeeze the juice from the remaining orange peels.
  9. 9. Cut the orange segments into thirds.
  10. 10. Mix the rhubarb pieces and oranges with the jam sugar.
  11. 11. Place the mixture in a large pot.
  12. 12. Heat the mixture over medium heat while stirring.
  13. 13. Let the jam boil vigorously for about 4 minutes.
  14. 14. Perform a setting test to check the consistency.
  15. 15. Add citric acid if necessary.
  16. 16. Fill the hot jam into prepared jars up to the rim.
  17. 17. Seal the jars tightly.
  18. 18. Turn the jars upside down for 10 minutes.
  19. 19. Then let the jam cool down completely.
