  1. 1. Wash the oranges under hot water and dry them thoroughly.
  2. 2. Peel the oranges using a sharp knife or a vegetable peeler.
  3. 3. Cut the orange peel into very fine strips.
  4. 4. Cut the oranges in half across the middle.
  5. 5. Squeeze the juice from the oranges using a cloth.
  6. 6. Catch the juice directly in a pot.
  7. 7. Tie the squeezed orange pulp into a cloth or a linen bag.
  8. 8. Hang the bag with the pulp into the pot containing the juice.
  9. 9. Secure the ends of the string to the pot handle so the bag hangs in the juice.
  10. 10. Pour 1 liter of water into the pot.
  11. 11. Add the fine peel strips to the pot.
  12. 12. Bring the contents of the pot to a boil.
  13. 13. Stir occasionally while boiling.
  14. 14. Turn off the stove.
  15. 15. Remove the cloth with the pulp remnants from the pot.
  16. 16. Let the peel remnants in the cloth cool down.
  17. 17. Pour the juice into a measuring jug.
  18. 18. Determine the required amount of sugar based on the juice volume.
  19. 19. Weigh approximately 225 g of sugar for every 250 ml of juice.
  20. 20. Sprinkle the sugar into the pot with the juice.
  21. 21. Add the peel strips back into the pot.
  22. 22. Squeeze the cloth with the remnants well.
  23. 23. Scrape the juice from the cloth with a spoon.
  24. 24. Let the marmalade simmer for another 10 to 20 minutes.
  25. 25. Stir occasionally.
  26. 26. Skim off any foam that forms if necessary.
  27. 27. Perform a gel test after about 10 minutes.
  28. 28. Drop 1 teaspoon of the hot liquid onto a small cold plate.
  29. 29. Check if the liquid becomes firm.
  30. 30. Continue simmering the marmalade if it is still too liquid.
  31. 31. Turn off the stove when the marmalade is firm.
  32. 32. Fill the marmalade into jars that have been rinsed with hot water or boiled.
  33. 33. Seal the jars immediately.
  34. 34. Turn the jars occasionally while they cool down.
  35. 35. Ensure that the peel distributes evenly in the marmalade.
