🍽️ Fluffy Orange Muffins

Ingredients
- 260 g flour
- 2 tsp baking powder
- 0.5 tsp baking soda
- 2 tsp orange zest (unwaxed, grated)
- 3 medium oranges
- 1 egg
- 150 g brown sugar
- 100 ml sunflower oil
- 250 ml buttermilk
- butter
Instructions
- 1. Turn on the oven to 180 degrees Celsius with top and bottom heat.
- 2. Cut 12 strips of baking paper (each 5 cm high) and 12 round bottoms.
- 3. Grease the muffin tins.
- 4. Line the muffin tins with the cut paper so that the bottom and sides are covered.
- 5. Sift the flour into a bowl.
- 6. Mix the flour thoroughly with baking powder, baking soda, and the orange zest.
- 7. Peel the oranges carefully with a sharp knife.
- 8. Remove the white bitter pith as well.
- 9. Cut the fruit segments out of the membranes.
- 10. Halve the fruit segments.
- 11. Catch the juice that escapes.
- 12. Squeeze the remaining juice from the orange peels.
- 13. Lightly whisk the egg in a large separate bowl.
- 14. Add sugar, oil, buttermilk, and the orange pieces with their juice.
- 15. Stir everything together.
- 16. Add the flour mixture.
- 17. Gently fold in the flour mixture until a smooth batter forms.
- 18. Fill the batter into the prepared tins.
- 19. Let the muffins rest in the tins for about 5 minutes.
- 20. Remove the muffins.
- 21. Wrap the paper tightly around them with twine or string.
- 22. Serve the muffins warm or cold.
