  2. 2. Cut 12 strips of baking paper (each 5 cm high) and 12 round bottoms.
  3. 3. Grease the muffin tins.
  4. 4. Line the muffin tins with the cut paper so that the bottom and sides are covered.
  5. 5. Sift the flour into a bowl.
  6. 6. Mix the flour thoroughly with baking powder, baking soda, and the orange zest.
  7. 7. Peel the oranges carefully with a sharp knife.
  8. 8. Remove the white bitter pith as well.
  9. 9. Cut the fruit segments out of the membranes.
  10. 10. Halve the fruit segments.
  11. 11. Catch the juice that escapes.
  12. 12. Squeeze the remaining juice from the orange peels.
  13. 13. Lightly whisk the egg in a large separate bowl.
  14. 14. Add sugar, oil, buttermilk, and the orange pieces with their juice.
  15. 15. Stir everything together.
  16. 16. Add the flour mixture.
  17. 17. Gently fold in the flour mixture until a smooth batter forms.
  18. 18. Fill the batter into the prepared tins.
  19. 19. Let the muffins rest in the tins for about 5 minutes.
  20. 20. Remove the muffins.
  21. 21. Wrap the paper tightly around them with twine or string.
  22. 22. Serve the muffins warm or cold.
