🍽️ Chicken Quarters with Orange Rosemary Glaze

Ingredients
- 1 chicken (approx. 1,2 kg)
- 4 tbsp olive oil (and oil for the pan)
- 2 unpeeled oranges
- 1 tbsp freshly chopped rosemary
- 1 tbsp honey
- salt
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the chicken under running water. Pat it completely dry with a kitchen towel. Cut the chicken into four pieces.
- 3. Place the chicken pieces skin-side up in a baking dish that you have previously greased with a little oil.
- 4. Wash one orange under hot water and dry it thoroughly. Grate the orange peel finely. Squeeze the juice from the orange.
- 5. Cut the second orange into wedges.
- 6. Whisk the orange zest, orange juice, olive oil, rosemary, and honey together in a small bowl to make a marinade.
- 7. Season the marinade with salt and pepper to taste.
- 8. Brush the chicken pieces generously with the marinade.
- 9. Distribute the orange wedges evenly over the chicken in the baking dish.
- 10. Place the dish in the oven and bake the chicken for about 30 minutes.
- 11. Baste the chicken occasionally with the pan juices during cooking. Add a little water if necessary to prevent the sauce from reducing too much.
- 12. Taste the sauce at the end and adjust the seasoning with salt and pepper.
- 13. Serve the chicken with the sauce.
- 14. Serve a fresh leaf salad on the side if you like.
