🍽️ Orange Ice in a Glass

Ingredients
- 250 ml heavy cream
- 2 egg whites
- 80 g sugar
- 2 tbsp double cream
- 40 ml orange liqueur
- 1 untreated orange (zested peel)
- orange zest (for decoration)
Instructions
- 1. Whip the cream in a bowl with a mixer until it is firm and stiff.
- 2. Whip the egg whites in a clean bowl until stiff.
- 3. Add the sugar gradually to the egg whites while continuing to whip.
- 4. Check if the egg mixture is shiny and forms a firm peak when you lift the beater.
- 5. Gently mix the stiffly whipped cream with the double cream.
- 6. Fold in the finely grated orange zest and the orange liqueur into the cream mixture.
- 7. Gently fold the stiffly whipped egg whites under the cream mixture.
- 8. Take four soufflé cups.
- 9. Wrap a strip of parchment paper around each cup.
- 10. Ensure the paper strip extends about 2 cm above the rim of the cup.
- 11. Fill the ice mixture into the prepared cups.
- 12. Place the cups in the freezer for about 3 hours.
- 13. Take the cups out of the freezer at least 15 minutes before serving.
- 14. Remove the paper collars from the cups.
- 15. Decorate the surface of the ice portions with fresh orange zest.
