  1. 1. Whip the cream in a bowl with a mixer until it is firm and stiff.
  2. 2. Whip the egg whites in a clean bowl until stiff.
  3. 3. Add the sugar gradually to the egg whites while continuing to whip.
  4. 4. Check if the egg mixture is shiny and forms a firm peak when you lift the beater.
  5. 5. Gently mix the stiffly whipped cream with the double cream.
  6. 6. Fold in the finely grated orange zest and the orange liqueur into the cream mixture.
  7. 7. Gently fold the stiffly whipped egg whites under the cream mixture.
  8. 8. Take four soufflé cups.
  9. 9. Wrap a strip of parchment paper around each cup.
  10. 10. Ensure the paper strip extends about 2 cm above the rim of the cup.
  11. 11. Fill the ice mixture into the prepared cups.
  12. 12. Place the cups in the freezer for about 3 hours.
  13. 13. Take the cups out of the freezer at least 15 minutes before serving.
  14. 14. Remove the paper collars from the cups.
  15. 15. Decorate the surface of the ice portions with fresh orange zest.
