  1. 1. Rinse the fresh lemon balm under running water.
  2. 2. Gently shake the leaves dry.
  3. 3. Pluck the small leaves off the stems.
  4. 4. Set aside a few leaves for garnish.
  5. 5. Roughly chop the remaining lemon balm.
  6. 6. Place the chopped lemon balm into a glass bowl or glass measuring cup.
  7. 7. Add the orange blossoms to the lemon balm.
  8. 8. Break the cinnamon stick into three roughly equal pieces.
  9. 9. Add one of the cinnamon pieces to the tea mixture.
  10. 10. Pour 500 milliliters of boiling water over the ingredients.
  11. 11. Cover the bowl or cup.
  12. 12. Let the tea steep for about 6 to 8 minutes.
  13. 13. Stir the tea mixture once gently.
  14. 14. Strain the tea through a sieve into your cups.
  15. 15. Place one piece of the cinnamon stick into each cup.
  16. 16. Stir in half a teaspoon of orange blossom water for each cup.
  17. 17. Sweeten the tea to your liking with sweetener.
  18. 18. Garnish the finished tea with the reserved lemon balm leaves.
