🥗 Fresh Orange and Onion Salad with Arugula

Ingredients
- 1 small red onion
- 125 g small oranges (1 small orange)
- 1 tbsp soy sauce
- 0.5 tsp honey
- salt
- pepper
- 0.5 tsp olive oil
- 20 g arugula (0.25 bunch)
Instructions
- 1. Peel the onion.
- 2. Cut the onion in half.
- 3. Cut the onion halves into very thin wedges.
- 4. Peel the orange.
- 5. Remove the white pith along with the peel.
- 6. Carefully cut out the orange segments between the membranes.
- 7. Catch the released juice in a small bowl.
- 8. Add the soy sauce to the bowl with the orange juice.
- 9. Add the honey.
- 10. Stir the mixture well.
- 11. Season the sauce with salt.
- 12. Season the sauce with pepper.
- 13. Add the olive oil.
- 14. Whisk the oil into the sauce.
- 15. Add the orange segments to the sauce.
- 16. Add the onion wedges.
- 17. Toss everything gently.
- 18. Wash the arugula.
- 19. Remove any damaged or wilted leaves.
- 20. Spin the arugula dry.
- 21. Chop the arugula into small pieces.
- 22. Scatter the arugula over the salad.
