  1. 1. Whip the egg whites in a bowl until they form stiff peaks.
  2. 2. Slowly stir the sugar into the egg whites, adding it bit by bit.
  3. 3. Continue beating the mixture until it becomes shiny and firm.
  4. 4. Gently fold in the cinnamon, orange juice, orange zest, 500 g of ground almonds, and the chopped almonds into the egg mixture.
  5. 5. Shape the dough into a ball inside the bowl.
  6. 6. Cover the bowl and place it in a cool spot for about 1 hour.
  7. 7. Preheat the oven to 130°C with fan (convection).
  8. 8. Sprinkle the remaining whole almonds onto your work surface.
  9. 9. Roll out the dough on the almonds to a thickness of about 1 cm.
  10. 10. Regularly wet a star-shaped cookie cutter with cold water.
  11. 11. Cut out stars from the dough.
  12. 12. Place the stars on two baking sheets lined with baking paper.
  13. 13. Bake the stars for 25 to 30 minutes in the preheated oven.
  14. 14. Remove the stars from the tray and let them cool down completely.
  15. 15. Dust the cooled stars with powdered sugar.
