🍽️ Duck Breast with Orange Flavor

Ingredients
- 4 wild duck breasts
- salt
- pepper (from the mill)
- 4 tbsp orange liqueur
- 6 oranges (unwaxed)
- 2 tbsp orange marmalade
- 1 tbsp ghee
Instructions
- 1. Season the duck breasts with salt and pepper and drizzle with 2 tablespoons of orange liqueur. Wash the oranges. Peel one orange thinly and cut the peel into fine strips.
- 2. Juice 4 oranges. Heat the juice with the peel, the remaining liqueur, and the jam. Reduce the mixture to half its volume. Peel the remaining 2 oranges thoroughly, remove all white pith, and cut out the fillets along the membranes.
- 3. Heat clarified butter in a pan. Sear the duck breasts for 2 minutes on each side. Reduce the heat and cook for another 3 to 4 minutes on each side.
- 4. Bring the orange sauce to a boil and add the orange fillets. Slice the meat and serve it with the sauce.
