🍲 Fruity Warm Tomato-Orange Soup

Ingredients
- 1 shallot
- 1 tbsp rapeseed oil
- 120 ml classic vegetable broth
- 500 ml tomato juice
- 80 ml orange juice
- 3 tbsp tomato paste
- 1 tsp vanilla sugar
- 30 g light crème fraîche (15% fat)
- 30 ml cooking cream
- salt
- white pepper
Instructions
- 1. Peel the shallot.
- 2. Dice the shallot into very small cubes.
- 3. Heat the oil in a pot.
- 4. Add the shallot cubes to the hot oil.
- 5. Sauté the shallots until they are soft and translucent.
- 6. Pour the vegetable broth into the pot.
- 7. Add the tomato juice to the pot.
- 8. Add the orange juice to the pot.
- 9. Bring the mixture to a boil.
- 10. Stir in the tomato paste using a whisk.
- 11. Stir in the vanilla sugar using the whisk.
- 12. Let the soup simmer for 10 minutes over medium heat.
- 13. Take a small bowl.
- 14. Add the crème fraîche to the bowl.
- 15. Add the cooking cream to the bowl.
- 16. Stir the crème fraîche and cooking cream until smooth.
- 17. Fill the cream mixture into a piping bag.
- 18. Season the soup with salt.
- 19. Season the soup with pepper.
- 20. Fill the soup into deep plates.
- 21. Pipe small dots of the cream mixture onto the soup.
- 22. Serve the soup.
