  1. 1. Rinse three jam jars (each 400 milliliters) including lids with boiling water.
  2. 2. Place the jars upside down on a clean kitchen towel and let them drain.
  3. 3. Cut the oranges in half.
  4. 4. Squeeze the orange halves.
  5. 5. Measure out 1200 milliliters of orange juice.
  6. 6. Strain the juice through a fine sieve into a pot.
  7. 7. Slice the vanilla pod lengthwise.
  8. 8. Scrape out the vanilla pod seeds with the back of a knife.
  9. 9. Stir the vanilla seeds and pectin sugar into the orange juice.
  10. 10. Wash the thyme.
  11. 11. Shake the thyme dry.
  12. 12. Add the thyme and the empty vanilla pod to the pot.
  13. 13. Bring the mixture to a boil.
  14. 14. Let the mixture boil vigorously over high heat.
  15. 15. Stir constantly.
  16. 16. Cook the mixture for 5 to 7 minutes.
  17. 17. Skim off the rising foam.
  18. 18. Drop a few drops of the liquid onto a plate.
  19. 19. Check if the juice sets after a few seconds.
  20. 20. Cook the mixture for another 1 to 2 minutes if necessary.
  21. 21. Repeat the setting test if necessary.
  22. 22. Remove the vanilla pod and thyme from the liquid.
  23. 23. Fill the hot liquid into the prepared jars using a ladle.
  24. 24. Seal the jars immediately.
  25. 25. Place the jars upside down on a damp kitchen towel.
  26. 26. Then place the jars upright again.
