🍳 Orange-Thyme Jelly

Ingredients
- 2 kg juicy oranges
- 1 vanilla pod
- 500 g jam sugar (2:1)
- 5 sprigs thyme
Instructions
- 1. Rinse three jam jars (each 400 milliliters) including lids with boiling water.
- 2. Place the jars upside down on a clean kitchen towel and let them drain.
- 3. Cut the oranges in half.
- 4. Squeeze the orange halves.
- 5. Measure out 1200 milliliters of orange juice.
- 6. Strain the juice through a fine sieve into a pot.
- 7. Slice the vanilla pod lengthwise.
- 8. Scrape out the vanilla pod seeds with the back of a knife.
- 9. Stir the vanilla seeds and pectin sugar into the orange juice.
- 10. Wash the thyme.
- 11. Shake the thyme dry.
- 12. Add the thyme and the empty vanilla pod to the pot.
- 13. Bring the mixture to a boil.
- 14. Let the mixture boil vigorously over high heat.
- 15. Stir constantly.
- 16. Cook the mixture for 5 to 7 minutes.
- 17. Skim off the rising foam.
- 18. Drop a few drops of the liquid onto a plate.
- 19. Check if the juice sets after a few seconds.
- 20. Cook the mixture for another 1 to 2 minutes if necessary.
- 21. Repeat the setting test if necessary.
- 22. Remove the vanilla pod and thyme from the liquid.
- 23. Fill the hot liquid into the prepared jars using a ladle.
- 24. Seal the jars immediately.
- 25. Place the jars upside down on a damp kitchen towel.
- 26. Then place the jars upright again.
