  1. 1. Turn on the oven and set it to 180 degrees Celsius for top and bottom heat.
  2. 2. Grease six small, heatproof molds with some fat.
  3. 3. Coat the greased molds evenly with sugar.
  4. 4. Fill the oven's fat pan with water.
  5. 5. Place the fat pan into the preheated oven.
  6. 6. Put the cornflakes into a freezer bag.
  7. 7. Seal the bag tightly.
  8. 8. Crush the cornflakes into fine crumbs using a rolling pin.
  9. 9. Chop the chocolate into very small pieces.
  10. 10. Mix the butter and 40 grams of sugar with a mixer until creamy.
  11. 11. Separate the eggs so that you have distinct egg yolks and egg whites.
  12. 12. Stir the egg yolks one by one into the butter-sugar mixture.
  13. 13. Add the crushed cornflakes to the mixture.
  14. 14. Add the almonds to the mixture.
  15. 15. Add the chopped chocolate to the mixture.
  16. 16. Sprinkle the cocoa into the mixture.
  17. 17. Add the orange zest to the mixture.
  18. 18. Add the rum flavoring to the mixture if desired.
  19. 19. Add a pinch of salt to the mixture.
  20. 20. Mix all ingredients well together.
  21. 21. Beat the egg whites with the remaining sugar until stiff.
  22. 22. Gently fold the stiffly beaten egg whites into the batter.
  23. 23. Fill the molds two-thirds full with the mixture.
  24. 24. Place the molds in the water bath in the oven.
  25. 25. Bake the cakes for about 25 minutes at 180 degrees.
  26. 26. Wash the orange thoroughly.
  27. 27. Dry the orange.
  28. 28. Grate a few thin strips of orange zest.
  29. 29. Cut the rest of the orange into thin segments.
  30. 30. Remove the molds from the oven after baking.
  31. 31. Let the cakes cool in the molds.
  32. 32. Garnish the cooled cakes with the orange segments.
  33. 33. Sprinkle the cakes with the orange zest.
