🍽️ Colorful Salad with Orange, Radish, and Feta

Ingredients
- 4 Oranges
- 3 Blood Oranges
- 1 Avocado
- 1 tbsp Lime Juice
- 1 Handful Arugula
- 250 g Radishes
- 1 Shallot
- 2 tbsp Raspberry Vinegar
- 4 tbsp Rapeseed Oil
- Salt
- Pepper (from the mill)
- Sugar
- 1 tbsp chopped Parsley
- 100 g Sheep's Cheese
- 4 Jasmine Flowers (for garnish)
Instructions
- 1. Squeeze the juice of one orange.
- 2. Peel the remaining oranges completely with a sharp knife until no white pith remains.
- 3. Slice the peeled oranges.
- 4. Arrange the orange slices on a plate, alternating between red and yellow.
- 5. Remove the skin and pit from the avocado.
- 6. Dice the avocado flesh into small cubes.
- 7. Drizzle the avocado cubes with lime juice.
- 8. Pick the arugula leaves from tough stems and wash them thoroughly.
- 9. Spin the arugula dry.
- 10. Wash the radishes.
- 11. Remove the green stems and root ends of the radishes.
- 12. Slice the radishes into very thin slices or use a mandoline.
- 13. Peel the shallot.
- 14. Finely chop the shallot.
- 15. Add the chopped shallot to the squeezed orange juice.
- 16. Add raspberry vinegar, oil, salt, pepper, sugar, and chopped parsley.
- 17. Whisk the ingredients together to form a uniform dressing.
- 18. Finally, season the dressing to taste with salt and pepper.
- 19. Crumble the feta cheese into small pieces.
- 20. Place the arugula, radish slices, avocado cubes, and feta in the center of the orange slices on the plate.
- 21. Drizzle the salad with the prepared dressing.
- 22. Serve the salad immediately.
