  1. 1. Rinse the salmon under cold water.
  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Cut the salmon into about 12 slices.
  4. 4. Make sure the slices are about 4 to 5 millimeters thick.
  5. 5. Wash the orange under hot water.
  6. 6. Dry the orange.
  7. 7. Grate the orange peel finely.
  8. 8. Squeeze the juice out of the orange.
  9. 9. Mix the orange juice with the oil.
  10. 10. Pour half of the marinade into a shallow dish.
  11. 11. Place the salmon slices in the dish.
  12. 12. Drizzle the remaining marinade over the salmon.
  13. 13. Cover the dish.
  14. 14. Let the salmon marinate in the refrigerator for about 20 minutes.
  15. 15. Put the sea salt and orange zest into a mortar.
  16. 16. Crush the mixture slightly.
  17. 17. Take the salmon out of the marinade.
  18. 18. Plate the salmon.
  19. 19. Sprinkle the salmon with the orange salt.
  20. 20. Pepper the salmon lightly.
  21. 21. Serve the salmon.
  22. 22. Garnish the salmon with herbs if desired.
