🍽️ Salmon on Nut Rice with Orange Dressing

Ingredients
- 250 g Basmati brown rice
- Salt
- 1 Organic orange
- 40 g Herbs (1 handful; parsley and dill)
- 5 tbsp Olive oil
- Pepper
- 600 g Salmon fillet (4 Salmon fillets)
- 50 g Salted cashew nuts
Instructions
- 1. Cook the rice in salted water until it is al dente. Follow the instructions on the package.
- 2. Rinse the orange under hot water and pat it dry.
- 3. Finely grate the orange peel and squeeze out the juice.
- 4. Wash the herbs and shake off excess water.
- 5. Finely chop the herbs.
- 6. Mix the herbs with the orange juice, orange peel, 4 tablespoons of olive oil, salt, and pepper to make the marinade.
- 7. Brush a baking dish with the remaining oil.
- 8. Rinse the salmon fillets under cold water and pat them dry.
- 9. Turn the salmon fillets in the marinade so they are well coated.
- 10. Chop the nuts coarsely.
- 11. Spread the cooked rice in the prepared baking dish.
- 12. Fold the nuts into the rice.
- 13. Place the marinated salmon fillets on top of the rice.
- 14. Drizzle the remaining marinade over the salmon.
- 15. Preheat the oven to 200 °C (180 °C for fan-assisted or gas mark 3).
- 16. Bake the dish in the preheated oven for approx. 20 minutes.
