🍰 Fruity Orange Yogurt Cream

Ingredients
- 3 Oranges (of which 1 organic orange)
- 1.5 sheets white gelatin
- 500 g yogurt (1.5% fat)
- 3 tbsp agave syrup
- 1 pinch cinnamon
- 30 g cashew nuts (2 tbsp)
- 2 tbsp pecans (approx. 30 g, shelled)
Instructions
- 1. Rinse the organic orange under hot water and pat it dry.
- 2. Finely grate the orange peel.
- 3. Cut the orange in half and squeeze out the juice.
- 4. Measure exactly 100 milliliters of orange juice.
- 5. Place the gelatin in a bowl of cold water for a few minutes.
- 6. Remove the gelatin from the water and squeeze it well.
- 7. Take two tablespoons of the orange juice into a small saucepan.
- 8. Warm the juice and stir in the squeezed gelatin.
- 9. Stir until the gelatin has completely dissolved.
- 10. Stir the liquid gelatin mixture into the remaining orange juice.
- 11. Place the juice-gelatin mixture in the refrigerator for 60 minutes.
- 12. Put the yogurt into a bowl.
- 13. Add one to two teaspoons of the grated orange peel.
- 14. Add two tablespoons of agave syrup.
- 15. Add some cinnamon.
- 16. Stir everything until smooth until the ingredients are well mixed.
- 17. Peel the two remaining oranges thickly.
- 18. Remove the white pith under the peel completely.
- 19. Cut the fruit fillets out between the membranes with a sharp knife.
- 20. Halve the individual orange fillets once.
- 21. Layer the orange fillets alternately with the yogurt in four glasses.
- 22. Chill the glasses for a while.
- 23. Chop the nuts coarsely.
- 24. Put the remaining agave syrup into a small frying pan.
- 25. Add the chopped nuts.
- 26. Caramelize the mixture lightly in the pan.
- 27. Place the caramelized nuts on a piece of baking paper.
- 28. Let them cool down.
- 29. Break the cooled nut mixture into small pieces.
- 30. Take the chilled orange jelly mixture out of the refrigerator.
- 31. Whisk the jelly mixture with a hand blender until frothy.
- 32. Distribute the frothy jelly mixture on the glasses.
- 33. Sprinkle the cream with the broken nut pieces.
- 34. Serve the cream immediately.
