  1. 1. Peel the orange skins very thinly.
  2. 2. Rub the fruits with salt.
  3. 3. Let them rest for 30 minutes.
  4. 4. Place the oranges in a bowl.
  5. 5. Pour boiling water over them.
  6. 6. Wait until the water has cooled down.
  7. 7. Remove the oranges.
  8. 8. Let them drain.
  9. 9. Rinse them with cold water.
  10. 10. Place them in fresh water overnight.
  11. 11. Cut the bottom of the oranges in a cross shape.
  12. 12. Boil the fruits in plenty of water until the skin is soft.
  13. 13. Remove the oranges.
  14. 14. Slice them into rounds.
  15. 15. Remove the seeds.
  16. 16. Dissolve the sugar in the water over low heat.
  17. 17. Add the lemon juice.
  18. 18. Bring the mixture to a boil once.
  19. 19. Serve the preserved oranges after the meal as an accompaniment to tea.
