  1. 1. Juice two oranges to get the juice. Peel the third orange carefully and slice it into thin rounds.
  2. 2. Rinse the fish under running water and pat it dry with a kitchen towel.
  3. 3. Season the fish with salt and pepper.
  4. 4. Heat one tablespoon of oil in a frying pan.
  5. 5. Fry the fish on each side for two to three minutes until golden brown.
  6. 6. Remove the fish from the pan and wrap it in aluminum foil to keep warm.
  7. 7. Deglaze the pan with the orange juice.
  8. 8. Do not let the sauce boil anymore.
  9. 9. Stir the butter into the sauce.
  10. 10. Season the sauce with salt and pepper.
  11. 11. Pluck the basil leaves from the stems.
  12. 12. Set aside some leaves for decoration.
  13. 13. Chop the remaining basil roughly.
  14. 14. Add the chopped basil to the sauce.
  15. 15. Place the orange slices in the sauce to let the flavors infuse.
  16. 16. Wash the arugula and spin it dry.
  17. 17. Distribute the arugula onto the plates.
  18. 18. Drizzle the arugula with some oil and balsamic vinegar.
  19. 19. Place the fish on the arugula bed.
  20. 20. Distribute the sauce over the fish.
  21. 21. Garnish the dish with the reserved basil leaves.
  22. 22. Serve the dish immediately.
