🍽️ Halibut in Orange Butter on Arugula Bed

Ingredients
- 3 Oranges
- 4 Halibut steaks (à approx. 180 g)
- Salt
- Pepper (from the mill)
- Olive oil
- 1 tbsp cold Butter
- 1 handful Basil
- 2 handfuls Arugula
- 3 tbsp Balsamic vinegar
Instructions
- 1. Juice two oranges to get the juice. Peel the third orange carefully and slice it into thin rounds.
- 2. Rinse the fish under running water and pat it dry with a kitchen towel.
- 3. Season the fish with salt and pepper.
- 4. Heat one tablespoon of oil in a frying pan.
- 5. Fry the fish on each side for two to three minutes until golden brown.
- 6. Remove the fish from the pan and wrap it in aluminum foil to keep warm.
- 7. Deglaze the pan with the orange juice.
- 8. Do not let the sauce boil anymore.
- 9. Stir the butter into the sauce.
- 10. Season the sauce with salt and pepper.
- 11. Pluck the basil leaves from the stems.
- 12. Set aside some leaves for decoration.
- 13. Chop the remaining basil roughly.
- 14. Add the chopped basil to the sauce.
- 15. Place the orange slices in the sauce to let the flavors infuse.
- 16. Wash the arugula and spin it dry.
- 17. Distribute the arugula onto the plates.
- 18. Drizzle the arugula with some oil and balsamic vinegar.
- 19. Place the fish on the arugula bed.
- 20. Distribute the sauce over the fish.
- 21. Garnish the dish with the reserved basil leaves.
- 22. Serve the dish immediately.
