🍽️ Chicken in Orange Marinade with Glass Noodles

Ingredients
- 1 chicken (approx. 1,2 kg)
- 2 garlic cloves
- 2 untreated oranges
- 400 g glass noodles
- 1 tbsp cornstarch
- 3 tbsp sesame oil
- 1 tbsp honey
- light soy sauce
- cayenne pepper
- 1 spring onion (only the green part)
Instructions
- 1. Wash the chicken and pat it dry with a kitchen towel.
- 2. Remove the skin and separate the meat from the bones.
- 3. Cut the chicken meat into small cubes.
- 4. Peel the garlic cloves and chop them finely.
- 5. Finely grate the peel of one orange to get the zest.
- 6. Peel the second orange in larger strips.
- 7. Squeeze the juice from both oranges.
- 8. Mix the chicken cubes with the orange juice, the grated orange zest, and the chopped garlic.
- 9. Cover the marinade and let it marinate overnight in the refrigerator.
- 10. Cook the glass noodles according to the instructions on the package.
- 11. Remove the chicken from the marinade and let it drain well.
- 12. Mix the chicken with the starch.
- 13. Heat oil in a wok.
- 14. Fry the chicken quickly over high heat.
- 15. Add the honey.
- 16. Deglaze the dish with the remaining marinade.
- 17. Simmer the chicken for 3 to 4 minutes until cooked through.
- 18. Season with soy sauce and cayenne pepper.
- 19. Add the orange zest.
- 20. Wash and clean the green parts of the spring onions.
- 21. Cut the green into very thin, diagonal rings.
- 22. Place the drained glass noodles on plates or a large platter.
- 23. Arrange the orange chicken on top of the noodles.
- 24. Sprinkle the dish with the spring onions and serve.
