🍰 Orange Chia Pudding with Pistachios

Ingredients
- 300 ml Almond Drink (Almond Milk)
- 300 ml Coconut Milk
- 1 Organic Orange
- 2 tbsp Birch Sugar (15 g each; Xylitol)
- 6 tbsp Chia Seeds (5 g each; light and dark)
- 100 g Yogurt (3.5% fat)
- 2 tbsp Pistachio Kernels (15 g each)
Instructions
- 1. Pour the almond drink and coconut milk into a pot.
- 2. Heat the milk mixture for one to two minutes until it boils.
- 3. Rinse the orange under hot water.
- 4. Dry the orange with a cloth.
- 5. Grate the orange zest finely.
- 6. Squeeze the juice from the orange.
- 7. Place the orange juice in a cool spot.
- 8. Stir the orange zest, xylitol, and five tablespoons of chia seeds into the warm milk mixture.
- 9. Let the mixture cool down for ten minutes.
- 10. Mix the yogurt into the cooled mixture.
- 11. Place the cream in the refrigerator overnight.
- 12. The next day, stir the orange juice into the cream.
- 13. Fill the cream into small bowls.
- 14. Roughly chop the pistachios.
- 15. Sprinkle the pistachios and the remaining chia seeds over the cream.
