  2. 2. Remove thick stems and bad leaves from the watercress.
  3. 3. Dry the watercress in a salad spinner or with a kitchen towel.
  4. 4. Cut the pomegranate in half.
  5. 5. Carefully separate the seeds from the peel.
  6. 6. Crumble the feta cheese into small pieces using your hands.
  7. 7. Distribute the watercress evenly onto four plates.
  8. 8. Place the crumbled cheese mixture onto the plates with the watercress.
  9. 9. Peel the oranges completely using a sharp knife.
  10. 10. Carefully cut the segments out of the orange halves.
  11. 11. Catch the released orange juice in a small bowl.
  12. 12. Squeeze the remaining orange pulp to extract more juice.
  13. 13. Whisk the orange juice with vinegar and honey in a small bowl.
  14. 14. Stir the grape seed oil into the juice mixture.
  15. 15. Season the vinaigrette with salt and pepper to taste.
  16. 16. Place the orange segments on top of the salad.
