🍝 One-Pot Pasta with Salmon

Ingredients
- 1 shallot
- 2 garlic cloves
- 1 zucchini
- 250 g salmon fillet
- 30 g parmesan block (30 % fat in dry matter)
- 1 tbsp olive oil
- 400 ml vegetable broth
- 400 g short whole wheat pasta (e.g. short macaroni, elbow macaroni)
- salt
- pepper
- 0.5 organic lemon (zest and juice)
- 400 ml milk (3.5 % fat)
- 3 sprigs basil
Instructions
- 1. Peel the shallot and garlic. Chop both ingredients finely.
- 2. Wash the zucchini. Cut it in half lengthwise and slice it.
- 3. Rinse the salmon fillet. Pat it dry and cut it into small pieces or strips.
- 4. Grate the Parmesan finely.
- 5. Heat the oil in a large pot.
- 6. Sauté the shallot and garlic in it for 2 minutes over medium heat.
- 7. Deglaze with the broth.
- 8. Add the pasta.
- 9. Season with salt, pepper, and lemon zest.
- 10. Pour in the milk.
- 11. Bring everything to a boil.
- 12. Simmer for 3 to 4 minutes, stirring occasionally.
- 13. Fold in the zucchini and Parmesan.
- 14. Cook for another 3 minutes.
- 15. Distribute the salmon strips on top.
- 16. Cook for 5 minutes until the fish and pasta are done.
- 17. Meanwhile, wash the basil.
- 18. Shake off excess water.
- 19. Cut the leaves into strips.
- 20. Season the pasta with salt, pepper, and lemon juice.
- 21. Sprinkle the basil strips over the one-pot pasta with salmon.
