Ingredients
- 4 eggs
- 1 red onion
- 150 g smoked salmon (in slices)
- 1 tbsp vegetable oil
- 2 tbsp butter
- salt
- pepper
- 1 tbsp small capers
- 1 tbsp chopped parsley
- 1 tbsp grated Gouda
Instructions
- 1. Peel the onion.
- 2. Dice the onion into small cubes.
- 3. Heat oil and butter in a large frying pan.
- 4. Whisk the eggs in a separate bowl.
- 5. Season the egg mixture with salt and pepper.
- 6. Finely chop the parsley and stir it into the eggs.
- 7. Pour the egg mixture into the hot pan.
- 8. Distribute the salmon, onion cubes, and capers evenly over the still liquid egg mixture.
- 9. Cover the pan.
- 10. Cook the omelette on low heat until it is set (firm).
- 11. Finally, adjust the seasoning of the finished omelette with salt and pepper.
- 12. Sprinkle the omelette with grated cheese.
- 13. Serve the omelette immediately.
